Kapsalis Nikolaos started to be engaged in beekeeping as an amateur in 1988 while at the same time he was working as a builder. This occupation over the years became his permanent job and to this day he is constantly trying to improve and enhance his production. The organic (BIO) honey he produces is mainly thyme but also pine thyme, flower honey, and honey from the Rouvas Forest, from bees that are found in the Forest. The pollen is collected by these bees, but also by the ones that are located in areas around the village of Gergeri. In 2002 he started carving stone and wood. To date, he has created dozens of sculptures of stone and wood, many of which are in his home. For the last five years, he has been hunting wild truffles with the help of specially trained dogs.
